Lemon-Garlic Olive Oil Dressing

1/2 cup REALLY GOOD extra virgin olive oil (such as Izaro)
1/4 cup apple cider vinegar
3 cloves garlic
1 tsp. Dijon mustard
1 tsp. Fresh or dried parsley
1 tsp. kosher salt (or garlic salt such as the one from Cornish)
Juice of one large lemon
2 tbsp. Honey

1. Pulse all ingredients in a food processor until well blended and creamy.
2. If using kale, toss in 15 minutes before serving to soften the leaves.
3. Store in an airtight glass container and refrigerate (bring to room temperature and shake before using again as separation may occur).


A big shout out to Goldenberry (New Canaan) for making my favorite salad dressing even more delicious with the addition of the Izaro Extra Virgin Olive Oil and garlic sea salt from Cornish Sea Salt Company. I have made this dressing more times than I can count but this is by far the best batch! This dressing goes perfectly with almost every salad especially kale
